SourDough Bread

Materials required:

  • Food Scale
  • Mixing Bowl
  • Baking Sheet
  • Metal Dough Scraper
  • Bread Lame
  • Serrated Bread Knife
  • Ingredients required:
  • 50 grams mature sourdough starter
  • 150 grams unbleached all-purpose flour
  • 150 grams room temperature water
  • 476 grams room temperature water
  • 1 teaspoon instant yeast
  • 840 grams unbleached all-purpose flour
  • 20 grams pink or sea salt
  • How to Bake:

      Step 1:Leave sourdough starter overnight before making. In a large mixing bowl, mix together sourdough starter with 150 grams of flour and 150 grams of water until thoroughly combined. Leave overnight with lid; be sure you use a large bowl.
      Step 2: 12 hours later, add 476 grams of water and instant yeast. Add in remaining flour and salt and mix with hand until no longer sticky; then let rest for 30 minutes.
      Step 3: knead the dough until its smooth for 10 minutes. Put back into mixing bowl and cover with plastic wrap, wait until dough doubles in size (2 hours).
      Step 4: Remove dough onto the floured surface or large baking sheet lined with parchment paper. Divide the dough in half using a metal dough scraper. Pre-shape each piece of dough by pulling the edges toward the seam and turning over so the seam is on the bottom. Twist each piece of dough with your hands on the bottom of the dough to make a tight ball. Cover both pieces of dough with plastic or floured towel and let rest for 15 minutes. To make wide loaves, gently roll each piece of dough back and forth to elongate it.
      Step 5: Preheat oven to 425 degrees Farenheight, cover loaves and let rise for 1 hour. Remove plastic wrap and brush water over the loaves, then cover with dough. Then bake for another 35-40 minutes.
      Remove from oven and let cool for 30 minutes on wire rack to set crumb inside. Cut loaves with knife and enjoy!!

    Soft Chocolate Chip Cookies

    Ingredients required:

  • 8 tablespoons of salted butter
  • 1/2 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips
  • How to Bake:

      Step 1: Preheat the oven to 350 degrees. Microwave the butter for about 40 seconds to just barely melt it.
      Step 2: Using a stand mixer or electric beaters, beat the butter with the sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated – 10-15 seconds (do not beat for too long)
      Step 3: Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large ball; Add the chocolate chips in.
      Step 4: Roll the dough into 12 large balls and place on a cookie sheet. Bake for 9-11 minutes. (DO NOT OVERBAKE)
      Step 5: Let them cool on the pan for 30 minutes, then enjoy!
